Mirza Ghasemi is an eggplant dish from the Caspian region of Iran and includes eggplant, cheese, egg, spices and garnish. Primarily a finely-seasoned stew or a spread, Mirza Ghasemi is eaten with flatbread. Students will be provided a detailed recipe along with step-by-step instructions with Mamalaz demonstrating her process of cooking; a delicate balance between art + science, leading to the tasting and experiencing of the dish. Other delectables will be served as well. Which ones? Only Mamalaz knows!
Class size is limited. Videotaping is permitted. Bring a notebook. Lots of information will be shared!
